Change

I loved this.  Although sometimes I do feel like I have a puppet master inside calling all the moves.  I feel for ya, Kermit!

One fun change in our lives is that Chubba Wubba is growing up.  I'll soon have to call him his real name.  He can stand forever by himself.  Even play with a toy.  Go up and down on his legs with perfect balance.  He JUST WON'T TAKE A STEP!  I've never seen such balance in a baby.  When he decides to take off, I'm pretty sure it will be running.

We all have big changes in our lives that are more or less a second chance. ~Harrison Ford

Yesterday

Yesterday was a holiday of sorts.  Our family was scattered doing various things....Rylee had a soccer tournament in St. George so T & T and the whole family was there.  Son Ryan is in Columbia (can I say he scares me to death???) on business. Yesterday was traditionally one of the biggest ski days at our resorts so I'm sure Ben and Susie were working their tails off. (Hopefully no one was "breaking" their tails off since Susie is on ski patrol...)  Brandi worked so her kiddos stayed overnight Sunday night (all 4)....then Monday was pretty hectic trying to cook and get ready for company dinner.  Thankfully we had a wonderful snow storm.  Not nearly enough but good enough.  The kids spent hours sledding (Brooke brought Annee and Chubba.  Chubba is not big enough to go sledding so he just cruised around in his walker while I was cooking and messin.')  David was awesome and spent several hours pulling sleds around the roping arena behind the Polaris.  Making memories with the kiddos. (He had to take these pictures with his cell phone and they didn't turn out real clear.  I love our hill that goes down to the horses.  Perfect for sledding.)

Getting ready for the Cooks to arrive.  Did I mention yellow is my favorite color?

Valene brought dessert.  No, it wasn't red, white and blue...but a yummy banana pecan tart from Bon Appetit magazine.  She is a wowzer dessert maker.

We had a great time with Valene and George, eating and talking...and then playing hand and foot.  Girls win again.  The guys are not even having fun anymore.  What can I say?

David definitely thought the Coconut Chicken was a keeper.  I loved the baked pear for a fru-fru lunch or dinner.  The veggies in a cloud was a favorite for me, as well.  The cloud is made with whipped cream, shredded cheese and Parmesan cheese and spooned on top of the veggies and baked.  Delish!

I don't think America will have really made it until we have our own salad dressing. Until then we're stuck behind the French, Italians, Russians and Caesarians. ~Pat McNelis

Bon Appetit with the Cooks!

Happy President's Day!  We are actually having the Cook's over for our Bon Appetit dinner...that we haven't had in months.  When we started these last year, our plan was a monthly dinner.  Life just keeps getting in the way.  It is our turn to host and I've been cooking up a storm.  Usually we (Valene and I) do recipes from Bon Appetit magazine (or other magazines) but tonight I thought I would do a Pinterest dinner....finally making a few recipes that I've pinned.  I can't just try something out cold turkey...so today I find myself making it to try it, then making it again for dinner.  Crazy, huh?  I'm already a little over the dinner...

But I'll pretend, with enthusiasm, that this is the first time I've decided on the menu.

Goodie!  We are having:

Baked Pears with Pine Nuts and Goat Cheese (only of course, I can't follow the recipe and used Blue Cheese and Feta mixed.)

Veggies in a Cloud (this wasn't pinned but from A Taste of Salt Lake cookbook.  These are the veggies before I make the whipped "cloud" that bakes over them.  Sauteed onions, broccoli, julienned carrots and water chestnuts)

Coconut Chicken with Apricot Sauce
Coconut Creamed Corn (I've posted this recipe before on the cooking blog.  Besides the corn being cooked in coconut milk, you add cilantro and lime.  Easy but a titch different.)

Cheesy Baked Rolls

I guess for President's Day I should have done something patriotic. But Valene is bringing dessert so maybe it will be red, white and blue. Anything that Valene makes is the best. I love time with our friends!

(and won't you be surprised.....I've actually posted the recipes on the cooking blog!) (okay, and please don't bring up the crock pot recipes that I haven't posted. Still haven't posted. That is why we have eternity!)

Something Fun

Several times yesterday I had sales people say to me, "So, are you going to do something fun this weekend?"  It caught me off guard each time (I'm a slow learner)...because immediately I had to 1) stop and think what I had been doing this weekend and then 2) came to the conclusion that it was Saturday afternoon...the weekend was almost over!  Each time (the checker at the grocery store, the guy at the Dillard's perfume counter, the funny guy at the vinyl kiosk, the funky girl I love at the dry cleaners) I asked them what fun thing they were doing this weekend (see, I also kept forgetting it is a "holiday" weekend.)  One lamented that she had to work...and therefore would not be having a great weekend until she was off.  The guy at the perfume counter was counting the hours until he would be off work and then he was off to Las Vegas to hang out with his buddies. The kiosk guy was already working on it.  He had some great pick-up lines with girls mingling around. (I loved hearing them.  It made me laugh.  He made me laugh.  He apologized to me for going so slow on the computer.  "I'm as slow as a grandma."  I did have to give him a slug in the arm....like being slow as a grandma was a bad thing....) My funky gal at the cleaners was counting the hours until she was off work and her real weekend "could begin."

I have been thinking about this.  How many times do I "wait to have joy" until some time in the future.  I'll be happy when I get this, when I get that.  When it is a certain day.  Forgetting that each day, each hour would be an hour of joy if I knew I wasn't going to have any more.

During one of my classes this week, the word "rejoice" was contemplated.  We think of it as like a joyful outburst.  But the "re" suggests that it is the re-finding of joy.  And I think that it is a task that we can all do.  Find the joy in the every day, not just the big moments.  I find that usually when the big moments come, I'm already too burnt out to enjoy them! (that's just me...I know No ONE ELSE does this....)

(and also, in the scriptures, "rejoice" is usually used in conjunction with the atonement of Christ.  That's what I'm teaching in Sunday School class today.  Certainly reason to rejoice for each of us!)

I found several awesome quotes about living in the moment that I want to post here.  I love pictures because they are eye candy....and I love quotes because they are "heart" candy.

Right now, and in every now-moment, you are either closing or opening. You are either stressfully waiting for something – more money, security, affection – or you are living from your deep heart, opening as the entire moment, and giving what you most deeply desire to give, without waiting.

Not doing is not about immobility or giving up in despair. It is first and foremost about being able to be with, to accept fully, what is in this moment.

Oriah Mountain Dreamer

Present-moment living, getting in touch with your now, is at the heart of effective living. When you think about it, there really is no other moment you can live. Now is all there is, and the future is just another present moment to live when it arrives.

Wayne Dyer

You’ll seldom experience regret for anything that you’ve done. It is what you haven’t done that will torment you. The message, therefore, is clear. Do it! Develop an appreciation for the present moment. Seize every second of your life and savor it. Value your present moments. Using them up in any self-defeating ways means you’ve lost them forever.

Wayne Dyer

Write in your heart that every day is the best day of the year.

Ralph Waldo Emerson

Now is the time to know that all that you do is sacred.

At any moment you have a choice that either leads you closer to your spirit or further away from it.

Life can be found only in the present moment. The past is gone, the future is not yet here, and if we do not go back to ourselves in the present moment, we cannot be in touch with life.

Quickie Cannisters

I use to be quite crafty.  I could craft with the best of them.  Well, maybe not the best of them...but it was typical when I saw something cute in a store or boutique, I would say, "Oh man, I could make that!"  And that used to give me pleasure.  And usually Pretty Patty Petty and I would get involved in a craft weekend when she would come to visit.

But not so much anymore.  The crafty has gone out of me.  Well, except if I'm making homemade Valentines or making something for my girls or....

if I happen to find the cutest red bottles (with suction lids) at Shopko.  Now, S. isn't my favorite store but truly I'm going to have to repent.  Because this was instant love.  I served salad in one for my last Bucket out in the cabin.  But I bought 3 others with something certain in mind.

We have a kiosk in our mall that does custom vinyl lettering.  Much cheaper than buying your own machine.  I picked out the font -boyzrgross....and had them print out some cookin' words.

I put them on the jars in less than 5 minutes which is about my attention span nowadays.

I love how they turned out.  I love vinyl lettering.  I love boyzrgross. Just not their socks....

Hot and Spicy

Thank you T & T and kiddos!  Nash was so adorable with his doorbell ditch!  Loved the pictures.  Tenillie, LOVE your salsa!  You guys rock!

The Day After

The last couple of days have been a whirlwind.  A fun whirlwind but I'm ready for a rest.  You know me, two gears.  Crazy busy or slug.  I'm ready for slug.  Today is an "Addi" day...which will be perfect.  I pick her up from kindergarten and we can chill for the day.

Valentine's Day yesterday was perfect.  Loved every minute of it.  From phone calls from kiddos singing to surprises on the doorstep.  I already shared about class yesterday morning.  We usually celebrate Valentine's with Cathy and Kirk and David had suggested last week, before I went out of town that maybe we would want to go to Lady Antebellum. Son Ryan and Marci were going and had wanted to get together for dinner before....but we knew restaurants would be crazy.  We passed on the concert and I just invited C & K and Brendalyn and Joe over for dinner.  It was the best.  No waiting in lines.  Yum food.  Perfect.

We had Turf and Surf-
Shrimp and cocktail sauce
crackers with cream cheese and pepper jelly
Baked tenderloins with mushrooms and blue cheese.
Salmon with basil butter.
Spinach salad
Fingerling potatoes.
Warm multi-grain bread.
Raspberry Almond Torte (from Market Street Grill.)

Overload  I know...but it was Valentine's day and everyone helped so it wasn't unmanageable.

Okay, my trip is over and Valentine's is  over...now I have to start talking butters again. The good life is taking its toll!  (Well, I do have two more events.  Tomorrow is the State Dental Association convention and they have a table for our family and will honor David.  His last big "ta-da."  And tonight is GNO at Brendalyn's.)  But then.  Butters!

Sold my car the other night and I had a little boo-hoo saying good-bye. My jeep and I had many a good time together, many memories. I would tell you what my new car is but I won't, since it is a little "too fancy" for me. It actually isn't the car I chose...but I can tell it is the car David (and my boys) loved. It is the color of a Valentine. I could actually find it at Costco! That's a plus. But, sadly, it will never be driven in the manner in which it was designed! It's not me yet but I know I will learn to love it.  And the most important thing....it will get us to Disneyland! In style. Wa-hoo!  Just a couple more months! (I still can't talk David into going...) (can you see I seem to live from event to event?)

Valentines- Whoop! Whoop!

Wow!  I missed Halloween and now I've almost missed Valentines as well!  Not that I'm missing them but missing journaling what is going on festivities-wise.  Lots of times I hear that people hate Valentine's Day...especially if they aren't "receiving" the kind of love-attention they want or need.  For me, I'd rather "do" Valentines than get.  Although I like to get as well...  I'm a visual friender which means I tell people I care when I'm making something for them or giving them something.  A few weeks ago, in our Tuesday Morning Class (we're just finishing the Pearl of Great Price)....we realized class would be on Valentine's.  Groan.  Except for me.  I'm ready to high-five and bring the party on.  Our fearless leader, Michelle, brought lunch...homemade chicken noodle soup, someone brought a salad and bread.  I brought....Valentines.

I, of course, made myself nuts last night....but it was the kind of nuts I was happy doing.   Here are some of the goodies the class received.

Below is another fun take on S'Mores.  You know me and S'Mores!  I'm laughing looking at the below picture...what's with that "one" chocolate chip?  (one of these is not like the other...)  First I broke my graham crackers into rectangles.  I placed 3 large (except one...) chocolate chips on a strip.  Mini marshmallows on the other.  I put them on a baking sheet, in a 325 oven for just a few minutes until everything looked soft and melty.

Carefully spatula them off the baking sheet (so you don't burn yourself!) and squish (very technical baking term) two together and let them cool.  Meanwhile, I melted the rest of the chocolate chips (I'm a milk chocolate girl...and in this recipe I am using Ghirardelli) in a small skinny glass in the microwave.  Okay, yes I DID burn a batch.  Don't you hate burnt chocolate?  I used one of those little juice glasses you get after you eat cheese spread (I did my neighborhood meals yesterday and just happened to make spaghetti pie, and a french loaf with mixed cheeses, cream cheese and a pimento cheese ...which made me realize those little glasses...of which I have 3 million....were perfect for dipping.)  When the cookies are cooled, dip just one end in the chocolate.  I put them on tin foil, because, alas, I was out of waxed paper which would have been a better choice.

Here are the little S'Mores dipped and then sprinkled with white beads.

When cool and dry, I put each one in a little bag labeled S'more Love.

I loved making the white chocolate popcorn with cherry M & M's the other day for Bucket so I made several more batches and put them in baggies.  I found a vintage Valentine (I'm gonna Pop a Corny question...will you be my Valentine?) for the topper.

I bought vintage Valentine bags to put all the goodies in but realized I didn't have enough.  Too late to go to the store so I just served the pink heart cookies.  I had planned on bagging them in cello but a platter had to do.

They got several other candy treats...but the best part was I made silly Valentines with pictures of gals from our class.  They are on a program I can't access on this blog (if only I were a smarter duck...)   but I thought they were DANG FUNNY!  Of course, at 1:00 in the morning, EVERYTHING is funny.  I could have gone all night making Valentine's but finally had to say STOP!!!

That's it.  I think everyone felt loved.  That is what I wanted.  I felt loved by the yummy lunch.  And I loved everyone loved their funny Valentines.

Happy Valentine's to You!  xoxoxo

Off On a Jet Plane

Taking off to see my folks in Vancouver this morning!  Bags are backed and I'm almost ready.  Be back Sunday night.  I'm going to try real hard while I am gone to get caught up on the cooking blog recipes.  I have a lot of posts drafted but finding the pictures is hard so maybe I'll just have to post them.  Several of you keeping asking for the crock pot recipes.  I'll try to get them posted as well.  Life is going to slow down.  Famous last words.

"The major work of the world is not done by geniuses. It is done by ordinary people, with balance in their lives, who have learned to work in an extraordinary manner." - Gordon B. Hinckley

(I love this quote by Pres. Hinckley...but I also laughed, because he doesn't say anything about people with only two gears.  Nutso-fast crazy or a slug.  I wish I had a middle gear.  I make myself nuts both ways.  And truly, a little vacation sounds perfect!)

Valentine Bucket

Oh my goodness...how this new format of blogspot makes me nuts!  It is impossible to arrange pictures in the right order.  After much ado and not having success, what you see is what you get.

Today I hosted host February Bucket.  I decided to do it out in the cabin...which is wonderful but also presents a few entertaining challenges.  No electricity (I string electrical cords in) means no heat (which I just bought two heaters from Home Depot.  One is TOTALLY worthless.  I'm not a "taker-backer" so I'm stuck.)  I told everyone to dress warm and the one little heater limped along.  We do have a wonderful fireplace .... but I didn't want everyone going home smelling like a campfire.  So I filled the fireplace with candles, took out blankies to snuggle in, had the Christmas lights twinkling- filled with Valentines.  We had SUCH a great time.

See, this next picture totally belongs at the end.  It just didn't want to move there.  I made popcorn covered in white chocolate with cherry M & M's.  So yummy! And the polka dot cups screamed, "Party!"

Again, this favor belongs at the end. I did a "show and tell" with these soap dispensers.  Rather than doing it all out in the cabin, I made everyone's last night...then just demonstrated how to do them.  Most had not made them before so it was a good show and tell.

Okay, now we're finally to the food table.  The menu:
~Tomato Basil Soup with homemade cheese crackers
~BLT Chicken Salad with BBQ dressing
~Fresh Fruit with Pina Colada Dip

~Bread sticks and rolls

~Dessert: Meltaway Cookies and White Chocolate popcorn

I lit candles and candles and more candles.  It looked so pretty.  I wish you could see how little the windows are on either side of the fireplace.  BFF Cathy got here early...and she and David and I were carrying food out to the cabin.  The cabin door has a pull on it, that raises the lever inside that opens the door.  When we went outside, the lever broke....meaning we were locked outside.  All the food was inside, candles burning.  So David had to open this window, take OFF this window, then crawl up and through this window.  Really, the opening was about 2 feet by 1 1/2 feet!  It was funny to watch...but my camera was locked inside as well.  He saved the day!
Love the Valentine's banner friend Sophia made for me?  Isn't it beautiful?  Thanks, Sophia, it was just what I wanted!
I just lost the pictures of the centerpieces.  (I'm going crazy here with this post.  Blogspot has suddenly become possessed!  But here is the idea.  Fill vases with sour balls (Mine were red, pink and white-
Cherry, grapefruit and sour pear.)  Windmills stuck in like flowers. Pink and red tulle bows.

Here we are to food again.  I made tomato basil soup and also cheese crackers that I cut into the shapes of hearts.  I thought it looked very Valentine-ish.

All 11 of us were here (our 12th, funny Kathy, is serving a mission in the Congo!  I should print her letters here...they are truly hair-raising!)  Love, love, love these women.  (love, love, love my hubby that he would crawl through a window for me!)

Candy Land

Last week, a few days before mine was Miss Addi-tudes birthday.  She turned 6!  She wanted to have a Sweet Shoppe birthday.  Her mommy decorated so cute.  She made a garland out of colored paper plates tied with cello to look like hard candies strung with candy necklaces.

Sprinkle doughnuts were easier than cake or cupcakes and just what Addi wanted.

She made suckers out of balloons, cello and pvc pipe.  Darling!

We played all sorts of candy games.  This one, the kids had to pass lifesavers from one straw to the next.  Whenever a person won or a team won, they got a quarter to put in the gum ball machine.

We also raced to drop pixie stix into jars, made candy necklaces, passed the presents playing "candy related music", played pin the candy on the cake,

and the grand finale was a cupcake pinata.  The kids got candy bags to take their loot home -

and thankfully, each received a new toothbrush as well!

Love you Addison Mae!  I miss our twice-weekly sleepovers this past few months now that she is in kindergarten.  Love, love, love this girl!

Holland

Thanks you sweet people, who responded about my dear Annee and Brooke.  Sherrie, who is my DIL Marci's aunt responded this way:

It's a good thing I worked in a Special Ed classroom with kids who had Asperger Syndrome to severe Autism, because the father of one of my granddaughters has Aspergers and I've been able to help my daughter understand a lot about it, and we love him to pieces. He is almost finished with college with a degree in Graphic Art Design. My daughter's relationship with him has to be adjusted a little, but there are good things about it, too! I love this story, and EVERYONE should read it, not just parents with children who don't fit perfectly into a mainstream category.

WELCOME TO HOLLAND

c1987 by Emily Perl Kingsley. All rights reserved

I am often asked to describe the experience of raising a child with a disability - to try to help people who have not shared that unique experience to understand it, to imagine how it would feel. It's like this......

When you're going to have a baby, it's like planning a fabulous vacation trip - to Italy. You buy a bunch of guide books and make your wonderful plans. The Coliseum. The Michelangelo David. The gondolas in Venice. You may learn some handy phrases in Italian. It's all very exciting.

After months of eager anticipation, the day finally arrives. You pack your bags and off you go. Several hours later, the plane lands. The stewardess comes in and says, "Welcome to Holland."

"Holland?!?" you say. "What do you mean Holland?? I signed up for Italy! I'm supposed to be in Italy. All my life I've dreamed of going to Italy."
But there's been a change in the flight plan. They've landed in Holland and there you must stay.

The important thing is that they haven't taken you to a horrible, disgusting, filthy place, full of pestilence, famine and disease. It's just a different place.

So you must go out and buy new guide books. And you must learn a whole new language. And you will meet a whole new group of people you would never have met.

It's just a different place. It's slower-paced than Italy, less flashy than Italy. But after you've been there for a while and you catch your breath, you look around.... and you begin to notice that Holland has windmills....and Holland has tulips. Holland even has Rembrandts.

But everyone you know is busy coming and going from Italy... and they're all bragging about what a wonderful time they had there. And for the rest of your life, you will say "Yes, that's where I was supposed to go. That's what I had planned."

And the pain of that will never, ever, ever, ever go away... because the loss of that dream is a very very significant loss.
But... if you spend your life mourning the fact that you didn't get to Italy, you may never be free to enjoy the very special, the very lovely things ... about Holland.

(Thanks, Sherrie, for reminding of this.  I have always loved this story.  In January, about 7 or 8 years ago, a friend in our Ward lost a sweet Down's baby....that had become a part of us.  Someone in the Ward, my friend Laurie who now lives in Las Vegas (and has the beautiful ranch in Circleville as well.)....gave S. this book (yes, you can kind it in book form!)....and not only that, planted white tuplips in their flowerbeds in the dead of winter, so spring could bring them a reminder of Jacob and the lessons learned and beauty of Holland.)

Sometimes David and I- or one of my friends look at one another and shake out heads and say, "How did we get HERE?!!!  This isn't really like we planned.  But wonderful things happen along the terrain of foreign country.  Not just with the traveler, but also those who travel with them.  Thanks, Sherrie, for reminding me (us) that Holland is a beautiful place as well.

Checking In

This has been a kiddo-sitting week....and a week of the flu.  Kudos to all the teachers/custodians/aides who get to/have to clean up during this season.  I had one sick one here...and another losing her cookies at school, so I had her the next day.  Everyone is well today.  Whew!  Except Brandi who pulled something at work and ended up at the Dr.'s.  This is what she shared:

(Hurt my back at work today, I know, I know!!) My doctor visit went something like this:

Doctor: So I guess you are done with work for the day...

Me: I guess so (beyond irritated that I am at the Dr.'s office and not at work)

Doctor: So I hope you don't have plans for the weekend!

Me: Plans?? No, my kids are going with their dad to Mesquite this weekend. For the WHOLE weekend! First break in 6 weeks!! I soo didn't have every single minute of the next 72 hours planned out, a 3-page to-do list, as well as a zumba class, skiing, a dinner and play, surprise party, gno, shopping trip, a pedicure, etc. etc.

Doctor: (Speechless..........awkward pause.....) so would you like a shot in your buttocks to help with the pain?

(that did make me laugh out loud.  Me laughing, not Brandi!)

I do love having David home. After picking Addi up from kindergarten, I was meeting my BFF from elementary through HS- Debbie- in Springville for lunch (post-birthday)this week, David took Addi horseback riding in the gully (we live next to a 680- plus acres equestrian park)....she did 5 miles on her own horse (she just turned 6.) So proud of her...some lady was walking the gully doing weird arm flashing exercises and actually spooked the horse and Addi went off. She cowgirled up and got back on her horse...and the clueless lady went on her exercising way.

Planning a Valentine's Bucket at my house next week. This is fabric that I found for the tablecloth.  I love doing Valentines with red, pink and green. Hoping to do lunch out in the cabin and I've got creative juices flowing.  Too many ideas, too many projects.  Yesterday when I was checking out at Hobby Lobby, the cashier said, "I want to go home with you- you have way too many fun things here!"  (can I say, one of the things I love about Hobby Lobby is that they have religious music playing!  Although they had a funky sax playing Come Thou Font- which is one of my favorite hymns- but I've never heard it played quite THAT way!  And that In-and-Out Burger puts scriptures on their packaging.  And no one is freaking out.)

I don't think I can last until the November elections with the dang phone ringing, easily 6 times a day with computers asking my opinion or tooting someones' horn.  Enough already!  Today I even got grouchy with the computer.....and felt pretty foolish when I hung up.

Made a Chocolate Cola cake the other day for neighbor meals.  It tastes like a funky Texas sheetcake...with a Cola chocolate fudge frosting.  Definitely a winner.  I've seen online that this is an old Southern recipe...and most call for mini-marshmallows as well.  The recipe I used didn't call for them...but if you've made this cake before, are marshmallows a must-have addition?

So, after months of testing and years of trying to figure out what exactly is going on, our little Annee (age 11) was finally diagnosed with Asperger's syndrome.  This has been a trying time for B and T.  No one ever wants a rough road ahead for any of our kiddos....but it is times like this that we need to circle our wagons and get informed (thanks to those who have shared information.  B. is a little overwhelmed with the road ahead but information is good- and when everyone is breathing in and out, things will get figured out. )  Tanner adopting Annee was a highpoint of this past year....and I think it is a tender mercy, that Annee- who is passionate about horses- got a new grandpa (3 years ago when they married) who is a cowboy.  I found this quote this week that spoke to me-

We can easily manage if we will only take, each day, the burden appointed to it. But the load will be too heavy for us if we carry yesterday's burden over again today, and then add the burden of the morrow before we are required to bear it. -John Newton
